Cucumber Tomato Greek Salad

This is such a refreshing, tasty salad and at the same time, such an easy one. Almost everyone has every ingredient already in the fridge!

Cucumber Tomato Greek Salad is something everyone should have in their repertoire! Here you go, something perfect for every summer party! It is a never fail, always pleaser salad for all kinds of palettes!

2 medium tomatoes
1/2 a long cucumber
Fresh parsley
1/2 cup black olives
1/2 white onion
Vegan feta (optional)
2 tablespoons almond yogurt
1 lemon
1 tablespoon Olive oil
Salt and pepper

Cut tomatoes into 1/4 slivers.
Cut the cucumber down the middle twice so that you have four long spears, and then chop them so you have small triangles.
Wash and chop parsley.
Dice half the onion.
Add to a bowl and throw in olives.
Add crumbled vegan feta. (optional)
In a separate bowl, mix almond yogurt, olive oil and half of a squeezed lemon and salt and pepper. Mix.
Dress salad and add more lemon and salt to taste.
ENJOY!!
