Carrot, Paprika, Avocado Salad

Think carrots are a side dish?  Think again!!

Ingredients for carrot salad:

6-7 large carrots

2 avocados

1/8″ serano chile (optional)

1 tsp cumin

1 tsp hot paprika

1″ of peeled ginger

dash of salt

1/4 cup of vegetable broth

lemon juice from half a large lemon

2 Tbsp date syrup

10 fresh mint leaves

 

Directions:

Combine all ingredients in a large bowl, except carrots, avocado and mint.  Stir.  Take peeled carrots and toss in marinade.

Grill Carrots 7 minutes on each side at 450.

Toss back in large bowl,  Slices avocados to have 8 slices per avocado. Drizzle on excess marinade.  Place mint leaves and serve!
