Today, I create the most delicious meat-free and dairy-free vegan chilaquiles using ingredients from my fridge!

I’m making vegan chilaquiles! These easy meat and dairy-free chilaquiles are perfect for the next time you are craving a spicy delight. They are no-fuss and can be made with the simplest of ingredients that you already have in your refrigerator! I created the yummiest and (bonus!) super healthy chilaquiles with tofu, black beans, avocado, vegan cheese, and more! No worries if you do not have the same ingredients as me. The beauty of this recipe is that it can be made with anything you already have in your kitchen! What could be easier than that?! *To keep down calories and to keep this dish whole-foods, plant-based, switch out the chips for your own chips. Put corn tortillas (ingredients should read corn, water, salt) in a toaster oven. When crisp, take out and add to dish.

3/4 can of black beans
2 oz. vegan mozarella
1/2 onion, diced
1/2 red pepper, chopped
1/4 jalapeno peppers, chopped
Tofu – 1 pack cuped
Salt/pepper to taste
Tobasco to taste
1 TBLSP olive oil
Corn chips
Vegan Chilaquiles

Sautee vegetables for 4 minutes on medium heat.
Add in black bean.
Add in tofu.
Add in mozzarella, stir.
Salt/pepper.
Add in corn chips, and let them get soft halfway through.
Tabasco to taste.
