With a hot summer in full swing, I have the perfect antidote: a chilled, sweet and spicey summer soup! What is even better is that it can be made in under 15-minutes, is super tasty and filling and so good for you.
Packed with fresh fruits and vegetables, my Gazpacho with a twist will have you asking for seconds…because there are very few calories. Only 50 calories per cup!

Ingredients:
2 Roma Tomatos
2-3 Persian Cucumbers
1/4 medium Red Onion
1/2 medium Red Pepper
4 Cloves Garlic
1/5 Jalapeno (or less if you don’t like it spicy)
10 Tbsp scoops of Honeydew Mellon
1.5 muddled Limes
10 Tbsp scoops of Watermellon
Salt/pepper/Mexican Oragano to taste
Blend in food processor, chill and serve!
For an even easier summer soup, try this Cantaloupe, Jalepeno, Cucumber Soup.
Ingredients:
1/2 Cantaloupe, scooped out
1 Persian Cucumber
1 medium slice of a Jalepeno
Blend in a food processor, chill and serve!
