YUM! Yum and more YUM! And this is so easy anyone can do it!!

Ice Cream!! Here goes…my final salute to summer! Might as well have some ice cream, and not work too hard for it. This recipe will allow you to whip up a frozen treat without all the work of real ice cream. Viola, my recipe for Peanut Butter, Strawberry, Banana Ice Cream with lots of optional additions to vary up the recipe each time so it feels new.

2 tablespoons peanut Butter
3 frozen bananas
8-10 plump frozen strawberries
1 can of coconut milk
3 tablespoons maple syrup
Mint (optional)
Raw oats (optional)
Chia Seeds (optional)
Coconut flakes (optional)

Serves 6.

Chop frozen bananas and frozen strawberries and put in blender. Add 1 can of coconut cream, 2 tablespoons of peanut butter and 2-3 tablespoons of maple syrup, depending on how sweet you want it. Blend and freeze! Voila – Ice Cream! Serve with mint garnish (optional).

Many more options for varies on this recipe: add oats, coconut flakes or dates if you want it chunky. If you want it with a more gelatinous texture, you can soak the chia seed in the coconut cream for 15 minutes before putting same in blender. Also, if you want to cut the sugar, use less maple syrup and more dates, which seem to give lower spikes in blood sugar.
