This recipe is so ridiculously easy and low in calories, you can’t go wrong!
4 cloves of garlic, thinly sliced
2 Tbsp Soy Sauce
1 Tbsp White Miso
2 tsp curry power
1″ sliced ginger
1 container of tofu, drained and cubed
4-5 green onions, cut longways
1 yellow squash cubed
1 red pepper, sliced 1/2 inch wide
3 Tbsp mushroom broth
Make Brown Rice with Mushroom Broth rather than water according to instructions.
Heat mushroom broth in a wok and add/mix in soy sauce, white miso, and curry powder. Add in tofu and let it brown. When half cooked add in veggies and gently mix in without breaking down tofu. When veggies and tofu are cooking, serve over rice.
