Looking for a low calorie option?

Artichokes!! Below is the easiest recipe you will ever encounter. You can make these tasty, savory artichokes can be made with either mushroom broth or olive oil…your call! Try them and let me know how it goes.

And remember…artichokes are great for potassium, vitamin C, vitamin K and fiber, among many other attributes.

Ingredients:
Artichoke
1/2 cup of mushroom broth OR 1/4 cup of extra virgin olive oil
1/4 cup of balsalmic vinegar OR (if using olive oil) 1/4 cup or red wine vinegar
1/2 white onion, diced
3 cloves of garlic, diced
salt and pepper to taste

How to be full without lots of calories?

Instructions:
Boil or steam artichoke (usually 10 minutes, although depends on size)
In a pan, put broth (or olive oil) onions and garlic and salt and pepper and simmer on low until onions and garlic are fully cooked.
Mid-way through, add vineager.
Drain artichokes, once boiled. Let cool. Open up artichoke and spoon in the dressing intoas many leaves and center as possible.

Voila! Easy as can be and filling and tasty!!
