Here is a recipe for fresh salsa that goes great on everything. In fact, it is great on Black Bean, Sweet Potato Tacos or anything you want to spice up! Ingredients:
10 Cherry Tomatoes
1/8 Onion (optional)
Small bunch cilantro 1/2 inch thick.
Dice and mash tomatoes so that juice runs out. Peel carrot thinly and then dice up peeled shreds. Dice onion (optional) and jalapeño. Get as much juice and pulp from lime as possible. I use a fork and muddle the inside to really get a lot of juice. Salt and pepper to taste. De-stem and dice cilantro and mix all ingredients.
