Grazers unite! Here are a bunch of healthy recipes: Guacamole, Chips and Salsa, that are easy to make and are perfect for a meal on the run!
Ingredients: 1 large avocado, 1/4 white onion, tabasco, salt, 1 lime and 8 cherry tomatoes.
Cut 1 large avocado in two. Slice each side down the middle longways and then horizontally.
Spoon into large bowl in chunks.
Wash and chop 8 cherry tomatoes. Add to bowl.
Dice ¼ of a medium yellow or white onion
Muddle the juice out of a medium lime by cutting down the middle and muddling with a fork.
Add tabasco (or stronger if you prefer!)
Mix. Chop cilantro and sprinkle on top or add more and mix in.
Healthy Spicy Chips
Ingredients: Simple tortillas and Tajin
Buy tortillas with these ingredients: corn, water, salt.
Cut them into 1/8 triangles.
Put them on parchment paper on a tray that fits in a toaster over.
Sprinkle Tajin all over them.
Toast in a toaster. Let sit for an extra 5 minutes when toaster turns off.
Here is a recipe for fresh salsa that goes great on everything. In fact, it is great on Black Bean, Sweet Potato Tacos or anything you want to spice up!
10 Cherry Tomatoes
1/8 Onion (optional)
Small bunch cilantro 1/2 inch thick.
Dice and mash tomatoes so that juice runs out. Peel carrot thinly and then dice up peeled shreds. Dice onion (optional) and jalapeño. Get as much juice and pulp from lime as possible. I use a fork and muddle the inside to really get a lot of juice. Salt and pepper to taste. De-stem and dice cilantro and mix all ingredients.
